The hefty Iberico pigs, recognised for their black hooves (pata negra), have a unique gene that allows them to grow meat that is of a richer and sweeter quality. In Zafra in the region of Extremadura, pigs are freely grazed, which helps maintain the balance of the ecosystem in the region. Their diet consists of around 9 kilograms of acorns daily, and they are able to put on 90 kilograms in a short span of three months, with their final weight averaging 180 kilograms. After consistently being overseen during the traditional curing and salting process, the end product is a ham that is delightfully oily, sweet, and unlike any other. This exceptional ham is taken from the hind leg and is provided with the bone, allowing for a deeply satisfying indulgent flavor.
