Its production is complicated and takes a lot of time. The milk that is collected during morning, it is left to left overnight in a special tank. The fat is removed in a caldera of copper and the milk mixed and then heated. Then rennet is added. The dough is then allowed to rest 2 to 3 days, after this process the cheese is salted and then left to refine for 20 to 120 days depending on the type of Bastardo del grappa.
It has an intense but pleasant taste; it is usually served with white and red wines, apples and pears.

Bitto is a traditional cheese of the Lombardy Alps. Its name means perpetual in Celtic, and it is one of few cheeses that, if aged properly, can be consumed even after 10 years.
It takes a lot of time to create this fantastic cheese. First the milk is processed, and the rennet is added to form the “Cagliata”. The “Cagliata” is then cooked at 52°C for 30 minutes and broken to extract the paste. Lastly the cheese is left to ridden for 70 days.
The flavor is rich and pleasant, and the more it is left to mature the more the flavor is intense. It is usually served with honey, walnut “Polenta” and full-bodied wines.

Buffalo mozzarella is produced in Campania.The buffalo milk, collected every morning at 3 am at the buffalo farms, is brought to the Dairy and is discharged into large circular tanks. Here, the milk is heated up to a temperature of 35-45 degrees. Then rennet is added. After about 30 minutes the cheesemaker makes a first break of the curd, making a cross on the surface with a knife. After about three / four hours of maturation, the curd grows into a uniform and elastic mass, which will then be spun with hot water. Boiling water at 100 ° C is poured into the spinners. Their content is then mixed with a stick, leading to the formation of a uniform paste (‘filatura’, ‘spinning’). Then the forms are created and salted.

Buffalo mozzarella is produced in Campania. The buffalo milk, collected every morning at 3 am at the buffalo farms, is brought to the Dairy and is discharged into large circular tanks. Here, the milk is heated up to a temperature of 35-45 degrees. Then rennet is added. After about 30 minutes the cheesemaker makes a first break of the curd, making a cross on the surface with a knife. After about three / four hours of maturation, the curd grows into a uniform and elastic mass, which will then be spun with hot water. Boiling water at 100 ° C is poured into the spinners. Their content is then mixed with a stick, leading to the formation of a uniform paste (‘filatura’, ‘spinning’). Then the forms are created and salted.
