Stracciatella is made from fresh mozzarella curds – the same curds used to make mozzarella balls. The curds are soaked in hot water to make them pliable. Then they are stretched into long ropes and thinner strands. The strands are cut into small pieces and placed in a container of cream. The curds and cream are stirred together and let sit until most of the cream is absorbed. It is the inside of the “burrata”.
Stracciatella cheese taste is similar to that of mozzarella cheese, mild and a bit sour and acidic. Since it’s made with cream, stracciatella tastes incredibly rich.
It pairs well with pasta, roasted vegetables, and tomatoes.

Pecorino cheese with black peppercorns is a cheese of long Sicilian tradition. While some say that the original recipe included not just the black peppercorns in the cheeses’ inner core, but the skin was also lined with chopped black pepper – a different processing that allows to flavor the cheese, protecting it at the same time, avoiding the “discomfort” of eating pepper grains.

Its production is simple. The milk is then heated to promote coagulation that takes place within 24 hours. Once the coagulation occurs, the curd is removed to a mold without milling. The molds sit for a period of 24 hours for the whey to drain out completely. The cheese is then salted and turned several times and then allowed to age depending on product desired.
It has a mellow goat flavor and a hint of spice in the finish.

Asiago cheese, is one of the most loved Italian gastronomic specialties. It has a long story – it was first made in the year 1000 A.D.
Nowadays it is mostly produced in Veneto with whole cow’s milk. The milk is heated to a temperature of 35 ºC, then the rennet is added to it to form the “Cagliata”, this mixture is heated again and then salted and cut. The forms are left to refine for about 20/40 days.
It has a sweet and delicate taste, and it is usually served with white wine and as an appetizer before the main course.

It is a fresh cheese made from raw and whole sheep’s milk. It takes on a spicy taste and persistent aroma, thanks to the short maturation of 10 days. The rind is soft and wrinkled, the paste is soft but compact, with minimal holes.
