Smoked burrata is a tasty alternative to the classic burrata Pugliese: a fresh and stretched-curd cheese, very similar to mozzarella but with a very soft and creamy heart.
Maldera smoked burrata has a more intense flavour compared to the traditional burrata. The natural smoking process gives it a typical smoke flavour, in contrast with its creamy heart, but perfect to be tasted as it is or included in other recipes.
One of the best ways to taste smoked burrata is to warm it up on a piece of traditional bread, paired with tomatoes, which create a perfectly balanced and unforgettable meal, thanks to their exceptional freshness.

This is the alter ego of ‘Bitto’ cheese, produced mainly in the autumn, winter and spring months is made exclusively on the alpine pastures. Like Bitto, it was awarded denomination of protected origin (DOP) status in 1995. It can be ripened with excellent results but it is often preferred fresh on its own or as an ingredient of traditional Valtellina recipes.

The name derives from the fact that it was once produced to ‘save’ (“salvare”) excess milk – in particular that already used for extracting the cream in order to make butter – from the animals feeding in the rich water meadows in southern Lombardy. This cheese is compact, dry, and the colour is ivory with few holes.
The taste is fresh and sharp with more aromatic traces when ripened at length.

This cheese has a wide geographical production, produced in two different versions.
Robiola Oro, presented here, is the one that is less aged of the two, but despite it, this variety has its own personality for the quality of basic milk – cattle fed with hay and its process of refining focuses on delivering one superb cheese!
It has a yellow clear and soft paste. White flowered rind is edible.
