Slightly tangy with fragrant aroma, this sheep’s milk cheese is made by the cheesemakers in Puglia, Italy.
A typical southern Italian semi-hard cheese with elastic consistency, few holes and pale-yellow paste is produced according to traditional recipe using natural rennet. Southern Italians used it mainly as a gratin cheese, but over the last few years, this “Coratino” has emerged as a delicious table cheese and can be used in many recipes or simply as part of a charcuterie or cheese board.

Caprino goat, cows’ cheese is produced in Lombardy by Mauri.
Its production is simple. The milk is then heated to promote coagulation that takes place within 24 hours. Once the coagulation occurs, the curd is removed to a mold without milling. The molds sit for a period of 24 hours for the whey to drain out completely. The cheese is then salted, black truffle is added and turned several times and then allowed to age depending on product desired.
It has a mellow goat flavor and a hint of spice in the finish.

Cheese is obtained by processing local cow’s milk. It’s a blue cheese, a type of cheese that is typical in Piedmont. Blue cheese has been produced in Italy since the beginning of the 20th century, at that time the cheese was left to refine in caves. The humidity and the temperature helped the creation of mold, that infected the cheese. This mold gives the cheese an intense and a slightly spicy flavor. It is usually eaten with rye bread and Polenta (a dish of boiled cornmeal).

Blue Cheese
