Completed the layers, during the first 48 hours, the product is “pressed” with weight – first extraction of liquid is thrown out. Following collections are poured into containers of anchovies holding an ideal temperature of 18-20 degrees Celsius. At the end of the maturation period, between 4 to 5 months, the last stage of the process is carried out.
Anchovy juice is filtered and placed into bottles. The result is an amber coloured juice with a strong, full-bodied taste.
