The name of this cheese derives from its extraordinarily strong aroma. It is ripened in caves with a high level of humidity which increases the fermentation of the cheese. In fact, the Latin name ‘Spretz Tzaorì’, meaning ‘tasty cheese’, is used as well as the name ‘Moena Stinker’.
It belongs to one of the numerous families of Trento cheeses, ‘nostrani di casello’.

Crescenza fresh cheese is a known Italian cow’s milk product, typical of the Northern Italy provinces including Lombardy, Veneto, Liguria. It’s consumed very young. It has no rind and its texture is extremely soft, creamy and delicate in flavour. Crescenza is also known as “Stracchino” another name used to recognize this superb, multi-use fresh Italian cheese.

Asiago cheese, is one of the most loved Italian gastronomic specialties. It has a long story – it was first made in the year 1000 A.D.
Nowadays it is mostly produced in Veneto with whole cow’s milk. The milk is heated to a temperature of 35 ºC, then the rennet is added to it to form the “Cagliata”, this mixture is heated again and then salted and cut. The forms are left to refine for about 20/40 days.
It has a sweet and delicate taste, and it is usually served with white wine and as an appetizer before the main course.
