Our selection of pigs comes from designated breeds in the Ávila and Segovia regions, where the animals are raised outside and nourished with natural grain. Our pigs are over 150 kilograms, and due to their low salt content, the hams and shoulders may be cured for an extended period of time in our drying houses and natural cellars. This is the process that lends La Prudencia products their delicate and pleasant taste. Along with our Iberian and Serrano products, we are the only Spanish company that maintains the same production methods. This is a boneless shoulder.
