A fresh cheese made of spun paste originally produced in the
region of Puglia. It’s made with cow’s milk and has a spherical
shape between 7 and 10 cm in diameter. Its appearance is that of a small bag of white paste, with a thickness of about 2 mm. This handmade “bag” encloses a soft heart called stracciatella – stretched curd mixed with milk and cream.
Its name is not random as it’s derived from the method of preparation. The “pasta filata” is ” torn ” by hand to form pieces (stracci or lucini ) of irregular shape and length. Its taste is given by the flavor of fresh milk combined with cream and its unmistakable shape.
The raw material selection, along with the processing which necessarily involves the manual unraveling of the stretched curd and the characteristic closure (head), are the distinctive elements of the Burrata di Andria.

This is the alter ego of ‘Bitto’ cheese, produced mainly in the autumn, winter and spring months is made exclusively on the alpine pastures.  Like Bitto, it was awarded denomination of protected origin (DOP) status in 1995.  It can be ripened with excellent results but it is often preferred fresh on its own or as an ingredient of traditional Valtellina recipes.

The younger brother of the traditional Gorgonzola (today known as Piccante), Sweet Gorgonzola was born in the regions of Lombardy and Piemonte, right after World War II. Soon enogh it became the most known variety of the Gorgonzola cheese. The main difference between the two varities consists of the greater whey content, making the Sweet Gorgonzola softer and more delicate version.

A compact white cheese made from sheep’s milk, with a slightly sharp flavour, aromatized by fragrances of walnut leaves.
After an initial aging period of two months, carefully selected shapes of cheese are matured for another 60 days between layers of freshly gathered walnut leaves. The fermentation and enzymatic processes reactivated by this method give the cheese a unique flavour and aroma.

A well-known and characteristic Valle d’Aosta cheese used in the recipes for fondues from this region.
It’s made with the milk from indigenous, black and brown patched cows. The alpine pasture productions or, at least, those safeguarding the artisan traditions, stand out amongst the variety of products which are currently on the market, ranging from medium to low quality.
