The Buffalo mozzarella with truffles is a fresh cheese from Campania.
The buffalo milk, collected every morning at 3 am at the buffalo farms, is brought to the dairy and is placed into large circular tanks. Here, the milk is heated up to a temperature of 35-45 degrees. Then rennet is added. After 30 minutes the cheesemaker makes a first break of the curd, making a cross on the surface with a knife. After 3 to 4 hours of maturation, the curd grows into a uniform and elastic mass, which will then be spun with hot water. Boiling water at 100 ° C is poured into the spinners. Their content is then mixed with a stick, leading to the formation of a uniform paste (‘filatura’, ‘spinning’). This buffalo mozzarella has added truffle flakes and has a classic porcelain white colour and smooth surface.
The flavour is always distinctive, but at the same time delicate, due to the addition of truffles, which give a characteristic taste to this product. Can be eaten alone or with tomatoes, topping on pizza or panini.

Pecorino Romano is a hard, salty, Italian cheese, often used for grating. Made with sheep’s milk, the name pecorino simply means “of sheep” in Italian.
Despite its name, today’s production of Pecorino Romano is mainly in Sardinia and only a small amount is made in Lazio (although this cheese’s origins lie in the Roman countryside) and. It is most well known as a cheese to be grated and can be ripened over long periods of time thanks to the high level of salt. Nonetheless, it is also excellent as a table cheese.
Its denomination of protected origin (DOP) status is one of the oldest in Italy as it was awarded in 1955.

This cheese has a wide geographical production, produced in two different versions.
Robiola Oro, presented here, is the one that is less aged of the two, but despite it, this variety has its own personality for the quality of basic milk – cattle fed with hay and its process of refining focuses on delivering one superb cheese!
It has a yellow clear and soft paste. White flowered rind is edible.
