This buffalo mozzarella is produced in the region on Campania, Italy – the original birthplace of this white gold! Unfortunately, buffalo mozzarella was only awarded denomination of protected origin (DOP) status in 1993, too late to prevent the generic name from being associated with stringy paste products made with cow’s milk.

Campania’s buffalo milk mozzarella is still produced in the area which has been producing ‘mozzarellas’ possibly since the Middle Ages, being a swamp area ideal for buffalo grazing.
This variety will arouse entousiasm in those who are able to recognize the inimitable taste of real mozzarella made with buffalo milk.
It’s aspect is very soft, compact and elastic, and when cut weepeing with buffalo milk serum. Its taste is fresh with distinctive musky traces of buffalo milk.
Serving suggestions:
It is important to consume this fresh cheese at room temperature since it looses a much of its flavour when cold from the ‘fridge. It can be consumed alone, on a salad, pizza, paninio, or with some fresh bread or accompanied with white wines, lagers, red tomato preserve or ‘schiacciata’ flat bread.
