Balsamic vinegar is a dark, concentrated, intensely flavored vinegar originating in Modena, Italy, made wholly or partially from grape must: freshly crushed grape juice with all the skins, seeds, and stems. True balsamic vinegar is made from a reduction of pressed Trebbiano and Lambrusco grapes.
The resulting thick syrup is subsequently aged for a minimum of 12 years in a battery of several barrels of successively smaller sizes.
The casks are made of different woods such as chestnut, cherry, oak, mulberry, ash, and juniper. True balsamic vinegar is rich, glossy, deep brown, and has a complex flavor that balances the natural sweet and sour elements of the cooked grape juice with hints of wood from the casks.

Prosciutto di Norcia IGP, considered the best of local production, is obtained with hams from heavy pigs initially trimmed and pear-shaped, and then dry-salted with salt for about three weeks.
After this period are desalted and seasoned with pepper and possibly other flavorings. After a period of drying, the duration of about two months and a half, in which the ham undergoes a slight smoking. To protect the parts not covered by the rind, the legs are massaged with a mixture of lard and flour. After a long period of curing, the ham is ready to be eaten.
It can be eaten on its own or with bread and cheese.

Ingredients: concentrated grape must, Balsamic vinegar of Modena (35%), modified maize starch, natural flavor.
Aged for 25 years. It contains no colorants, preservatives, or added sulfate. Originating from Reggio Emilia, it’s obtained with the use of only genuine materials of highest quality without the added chemicals and artificial flavours. The only ingredient used, Lambrusco grape, is natural. The preparation method follows specific processes and the aging is done in wooden casks of highest quality.
