Grana Padano cheese is a typical Italian cheese. Its production is simple. First the partially decremented cow’s milk is added, then the rennet is added to allow the milk to be matched. Then the wheels are salted, and they are left to ripe for 30 days.
It has a harmonious, dry and intense flavor. It is usually paired with full bodied, aged, red wines but also young, sparkling white wines. Fresh fruits (apples and pears), Balsamic Modena vinegar and crusty bread.

Mascarpone is produced in Lombardy by a process known as acid-thermal coagulation of milk cream by adding acetic or citric acid and processing it for 5 or 10 minutes at temperature up to 90-95 °C. This method of coagulation, coupled with a dripping of serum, results in its creamy consistency.
It is usually eaten on its own or used to prepare dessert, such as tiramisu. During the Christmas time it is also consumed with Pandoro or Panettone. A vast variety of uses!

Moncenis blue cheese is produced with pasteurized cow’s milk from two successive milkings. Then is left to ripe for 3-4 days and the second “cagliata” is added so the two masses do not join in a homogeneous way and create, inside the dough, cracks ready to accommodate molds.
It has a strong and intense flavor, and it is usually served with full bodied, aged red wines, hot Italian fruit mustard, red onion preserves, rye bread and polenta (a boiled cornmeal)

A hard cheese with a compact cooked paste without holes, Piave DOP mezzano is a Venetian cheese that takes its name from the river that crosses the valley of the Piave.
Produced with cow’s milk, the milk used to come exclusively from the area of Belluno. Ivory-white in colour, the maturation of Piave DOP mezzano reaches a maximum of three months.
This is an excellent cheese with a high nutritional value and easily digestible. Its has a mild, sweet flavour with aromas of warm butter on toast.

The aspect is very soft, granulose, white paste with weeping serum once cut into. The taste is delicate and milky.

One of the most known Sicilian cheeses, salty ricotta is semi-hard whey cheese, conceived to extend the shelf-life of the fresh ricotta and can be considered a gourmet pecorino cheese! Like pecorino Romano and pecorino Siciliano, this cheese has a strong, salty, and somewhat nutty flavor.
Salty ricotta is made by straining the fresh ricotta, which is then salted with coarse sea salt by hand exclusively.
