Crescenza fresh cheese is a known Italian cow’s milk product, typical of the Northern Italy provinces including Lombardy, Veneto, Liguria. It’s consumed very young. It has no rind and its texture is extremely soft, creamy and delicate in flavour. Crescenza is also known as “Stracchino” another name used to recognize this superb, multi-use fresh Italian cheese.

Aged Cheese
Crotonese Cheese – 2kg

Crotonese cheese comes from Calabria in southern Italy.
Its production is long and usually it takes place from January to June. First the milk is heated at a temperature of 38°C, then the rennet is added to form the “cagliata”. This paste is then broken with a “mscu” an appropriate wooden stick, the “cagliata” is then heated again at a temperature of 44°C. The paste is then modeled to create the forms. These forms are then salted for some days. They then are left to ripe for 12 months.
It has a sweet and salty flavor. It is usually served with spicy pear and apple mustard, pasta and homemade bread.

From the Ossola valleys of Piemonte, this toma cheese is aged for a minimum of 60 days.
The cheese is covered with “Prunent” pomace (a native variety of Nebbiolo vine). It allows the cheese to absorb the aroma of the wine, without coloring the paste but only the noble rind.
This unique cheese is characterized by a very intense flavor, with slight notes of grass or hay – a perfect combination with a robust red wine or even a typical Italian salami like pancetta or lardo. Its aspect is compact, with dense holes and a straw yellow colour.

Cheese is obtained by processing local cow’s milk. It’s a blue cheese, a type of cheese that is typical in Piedmont. Blue cheese has been produced in Italy since the beginning of the 20th century, at that time the cheese was left to refine in caves. The humidity and the temperature helped the creation of mold, that infected the cheese. This mold gives the cheese an intense and a slightly spicy flavor. In this case it is also combined with the unique coffee flavor. It is usually served with red wine, “Polenta” (a dish of boiled cornmeal) , rye bread and grappa.
This type of Sancarlone blue cheese is still today cured in caves for minimum 90 days after the process of coffee powder covering.
