Aged Cheese
Caciocavallo Lucano Pace e Becce – 100 gr

This particular variety of Caciocavallo (considered the best and more noble example, defined by some as the Parmigiano Reggiano of the South) takes its name from the breed of cattle used for its production. The cows live in a free-range condition, feeding on strongly aromatic grasses such as wild fennel, liquorice and laurel bay whose perfumes are absorbed into the milk.

Fresh Cheese

Camembert dell’Alta Langa is a soft cheese, slightly aged, made from a mix of cow, sheep, and goat’s milk with a delicate and wrinkled rind and a creamy and slightly ammoniacal undercrust. The combination of all three milks, paseteurized individually, and then combined, is what makes this cheese surprisingly well rounded.
The taste is sweet and balanced. Its flavor is characterized by notes of fresh milk, hay, and straw.
Can be used in various recipes, as well as being eaten in slices. It is good cooked in the oven, served as a fondue, accompanied by speck and radicchio.

Caprino goat, cows’ cheese is produced in Lombardy by Mauri.
Caprino Cow (80 gr x 2 logs)
Its production is simple. The milk is then heated to promote coagulation that takes place within 24 hours. Once the coagulation occurs, the curd is removed to a mold without milling. The molds sit for a period of 24 hours for the whey to drain out completely. The cheese is then salted and turned several times and then allowed to age depending on product desired.
It has a mellow goat flavor and a hint of spice in the finish.

The Charcoal of Caseificio Altalanga comes from the ancient tradition of storing cheese in ashes.
What is obtained is a cheese with a soft and greasy texture, thin rind, and a characteristic dark colour, due to the washing with vegetable carbon during the maturing process.
The sweetness of the cooked milk blends, in the mouth, with the pleasant vegetable and bitter note of the charcoal.
Pair it with a glass of gritty red wine, a Barbera d’Alba, and accompanied by wholemeal breadsticks or corn squares.

Casera Valtellina DOP – 100 gr

This is the alter ego of ‘Bitto’ cheese, produced mainly in the autumn, winter and spring months is made exclusively on the alpine pastures. Like Bitto, it was awarded denomination of protected origin (DOP) status in 1995. It can be ripened with excellent results but it is often preferred fresh on its own or as an ingredient of traditional Valtellina recipes.

Blue Cheese
Castelmagno DOP – 3kg

Castelmagno is a type of cheese that is produced in the city of Castelmagno in Piedmont.
Its production takes a lot of time. First calf rennet is added to the cow’s milk, then the paste is cooked at a temperature of 35 °C. The “cagliata” is then broken to prepare the cheese wheels. The wheels are salted and left to ripen in a dry and cold place for 60 days.
It is usually served with full bodied, aged red wines, white watermelon chutney, blueberry jam, rye bread and “Polenta” (a dish of boiled cornmeal).
It has an intense and strong flavor.

Pushal saffron is a type of saffron that includes not only the red stigmas (like Negin and Sargol saffron) but also a small portion of the surrounding yellow style. It is of lower quality than Sargol saffron, but still considered as a premium quality. This type of saffron is less expensive than the purest grades of saffron, as it contains a lower concentration of the flavorful and aromatic compounds found in the red stigmas. -

Sargol Spanish Saffron
Saffron is a spice made from the stigmas of the fall-flowering plant Crocus sativus, a member of the iris family.
As the world’s most expensive spice, saffron provides a beautiful golden color and pungent, aromatic flavor to foods. A labor-intensive crop, the three stigmas are handpicked from each flower, spread on trays, and dried over charcoal fires. Saffron threads should be crushed before using them in recipes. Saffron is suitable for vegan, gluten-free, and paleo diets.
This is whole pistil, grade 1 (Mancha) NORM ISO 3632, Spanish Sagrol saffron with dark red pistils of the Crocus Sativus Linnaeus rose. Sargol saffron, is a grade of saffron that only consists of the red stigmas, with no yellow or white parts. It is considered to be a higher quality than “konge” saffron, which includes all parts of the saffron flower.
Sargol saffron also has a higher concentration of the key compounds that gives saffron its color and flavor.Packaged in food-safe bags and boxes to maximize freshness and shelf life. Store it in an airtight container, in a fresh place, away from light, moisture and temperature fluctuations.
