    Crotonese cheese comes from Calabria in southern Italy.

    Its production is long and usually it takes place from January to June. First the milk is heated at a temperature of 38°C, then the rennet is added to form the “cagliata”. These forms are then salted for some days. They then are left to ripe for 12 months.
