Aged Cheese

The name derives from the fact that it was once produced to ‘save’ (“salvare”) excess milk – in particular that already used for extracting the cream in order to make butter – from the animals feeding in the rich water meadows in southern Lombardy. This cheese is compact, dry, and the colour is ivory with few holes.

As the world’s most expensive spice, saffron provides a beautiful golden color and pungent, aromatic flavor to foods. A labor-intensive crop, the three stigmas are handpicked from each flower, spread on trays, and dried over charcoal fires. Saffron threads should be crushed before using them in recipes. Saffron is suitable for vegan, gluten-free, and paleo diets.
This is whole pistil, grade 1 (Mancha) NORM ISO 3632, Spanish Sagrol saffron with dark red pistils of the Crocus Sativus Linnaeus rose. Sargol saffron, is a grade of saffron that only consists of the red stigmas, with no yellow or white parts. It is considered to be a higher quality than “konge” saffron, which includes all parts of the saffron flower.

These scamorza sticks are round and long, similar to a thin hot dog. Their caramel-coloured skin is smooth and glossy, uniform and of medium consistency. The past is creamy white, stringy, and soft. The taste is mild, salty, and pungent due to smoking.
This product is produced by Maldera in Puglia, Italy using a whole pasteurized cow milk. The smoking process of the cheese is done using a natural method (cold smoked with Beechwood chips below 18 degrees Celsius).
It can be served as apertivo or antipasto as something different and special. Also great with salads, cold cuts or even better when served warm in an over after being wrapped in speck or prosciutto.

Flavoured Cheese
Scamorza vacuum packed – 300g
Scamorza is an Italian, spun-paste cow’s milk cheese. Shaped like provolone in a pear shape, it is a semi-soft white cheese with a texture comparable to that of a firm, dry mozzarella.
At the end of the cheese-making process, the cheese is hung together in strings to ripen for about two weeks. The process of ripening the cheese has given its name: Scamorza, which means ‘beheaded’ in southern Italy.
The smoked variant is made by smoking the cheese over flaming straw for around 10 to 15 minutes.
The texture of Scamorza is elastic and stringy with piquant, milky and creamy flavours. Smoked Scamorza has a subtle, smoky flavour with a sweet, light caramel note.
Scamorza is used as a substitute for mozzarella.

Spanish Charcuterie
Serrano ham boneless “Gran Riserva” – 6 kg approx.

Jamón is a dry-cured ham produced in Spain. It is one of the most globally recognized food items of Spanish cuisine. It is also regularly a component of tapas. Serrano ham, unlike its cousin, Iberico Jamon, is made from conventional white pork.
Fresh hams are trimmed and cleaned, then stacked and covered with salt for about two weeks to draw off excess moisture and preserve the meat from spoiling. The salt is then washed off, and the hams are hung to dry for about six months. Finally, the hams are hung in a cool, dry place for six to 18 months, depending on the climate, as well as the size and type of ham being cured.
The drying sheds (secaderos) are usually built at higher elevations, which is why the ham is called “mountain ham”.
Serrano ham should be enjoyed at room temperature. The traditional way to consume Serrano ham is to accompany it with bread and wine or beer. In some places it’s traditional to prepare bread by spreading it with tomato, or to or accompany Spanish ham with drinks like fine wine or manzanilla.

Coppa is a traditional Italian pork cold cut (salume) made from the dry-cured muscle running from the neck to the fourth or fifth rib of the pork shoulder or neck. It is a whole muscle salume, dry cured, and typically sliced very thin.
In its production, coppa is first lightly seasoned often with red and sometimes white wine, garlic, and a variety of herbs and spices that differs depending on region. The meat is then salted, stuffed into a natural casing, and hung for up to six months to cure.
It is esteemed for its delicate flavor and tender, fatty texture. It is usually sliced thin for use in antipasti or sandwiches such as muffulettas, Italian grinders and subs, and panini, as well as some traditional Italian pizza.

Produced in the northern part of Piedmont, namely in the Valsesia mountains, this cold cut derives from the lean cut of bovine meat. The mean is flavoured with garlic, bay leaves, rosemary, and sage as well as other mountain herbs and left to salt and marinate in its own juices. The flavour is delicate and aromatic.
The origin of this charcuterie is ancient and stems from the need of peasant families to preserve meat during the long winter months in the Alps.
SERVING
With a higher degree of maturation, the cold cut becomes harder and more robust in flavour, making the meat darker in colour. Mocetta is traditionally thinly sliced. Its flavour is enhanced by pairing it with honey as well as walnut oil.

Lardo is, in essence, cured pork fat. The lard is taken specifically from the back of the pig and cured in a marble basin with a mixture of salt and spices according to the Valsesia method. It’s a delicious product that we’ve only recently come to appreciate, however Italians have been eating it for centuries. The cherished fat sections are milky-white fat, while the leaner parts vary in colour from pink to red depending on the muscular anatomy.
To make Lardo, the marble basins are first rubbed all over with garlic before the trimmed piece of fat is laid inside. Salt, pepper, rosemary, and garlic are all placed in between the layers of lard and the fat is left to cure. It’s sent is delicate: the sweet notes in the flavour set off the spices and herbs used in the curing process.
SERVING
It is usually eaten with bruschetta and on its own with olive oil. Can be used in numerous recipes.

Prosciutto di Modena PDO is a raw and cured charcuterie product obtained through the processing of fresh legs from heavy pigs born and reared in Italy. Immediately after slaughtering, the fresh legs are refrigerated until they reach a temperature of around 0°C. The salting operations are repeated twice, after which the hams are left to rest for at least 60 days in special rooms with controlled temperature and humidity. After the resting period, the legs are washed and dried before curing, which lasts for at least 14 months from the start of processing. Greasing takes place during this period, which involves the exposed part of the ham being covered with a paste of pork fat, salt, pepper, and rice flour.

The flavor is savory yet not salty, with a pleasant, sweet, and intense fragrance. It is best cut in thin slices shortly before serving. Its flavor is brought out when accompanied by bread, grissini, or the traditional Modena tigella or crescentina bread. It can also be served with other charcuterie products and soft cheeses -
