Giunco Black cheese is produced with fresh sheep’s milk from Sardinia.
Its production takes six months. First the milk is heated, and rennet is added to create the paste to then shape the forms of cheese. After this process the cheese is left to ripe for at least 6 months.
It has an aromatic and delicate flavor. It is usually served with Cannonau wine, and it is often used also as a grated cheese.

The younger brother of the traditional Gorgonzola (today known as Piccante), Sweet Gorgonzola was born in the regions of Lombardy and Piemonte, right after World War II. Soon enogh it became the most known variety of the Gorgonzola cheese. The main difference between the two varities consists of the greater whey content, making the Sweet Gorgonzola softer and more delicate version.

A compact, elastic and ivory cheese that has a special characteristic. It is bathed for several days in wine, usually Merlot red wine marc, then the wine is not absorbed but its perfume penetrates the cheese and the subsequent ripening accentuates it even more. It has an intense and spicy taste with an additional of rich fruity notes of wine.
It was originally a typical Veneto method for facilitating the preserving of cheeses, but it is now used mainly as a means of giving the products a particular flavor.
The practice is currently widespread throughout many areas of Italy but its origins lie in and around Treviso.
It is produced with goat and cow milk.

Its production is simple. The milk is heated, and then vegetable rennet (Cynara cardunculus) is added to create the “cagliata” and create the forms. In this cheese a precious blend of truffles is added, and the forms are left to ripe for a minimum of 60 days. It has a captivating and unique flavor.
It is usually paired with a medium bodied red wine and bread. It is eaten in cubes and during “aperitivo”.

Ubriaco Vojant cheese is produced in Veneto.
Its production is long. The raw pasteurized cow’s milk is heated, and rennet is added to create the “cagliata”. This paste is then broken and cooked. The forms are then left to soak in Merlot wine for 5 days and left to ripe for at least 120 days.
It has an intense and piquant with fruity traces of wine.
It is usually paired aged, red wines, hot marrow preserves, Vin Santo or Marsala jelly and homemade bread.
