Pecorino Gran Riserva del Passatore is produced in Emilia-Romagna.
The sheep’s milk is heated, and calf rennet is added to create the “cagliata”. This paste is then broken, and half-cooked. The forms are then dry-salted and rubbed with raw flaxseed oil every day in order to maintain soft rind and to allow a uniform maturation.
It has a sharp, salty, and spicy flavor with some distinctive traces of truffle. It is usually eaten on its own and with vegetables or grated in pasta.

Made with sheep’s milk pasteurised at 72°C, cooling at 32°-35°C.
Cheese cultures are added and mixture is left to ferment, after which rennet is added and the mixture coagulates.
The curd is broken up and drained into moulds.
The cheese is then brined and dried in a cold room at 6°- 8°C. Final stage of maturation in a cold room at 8°C for about 30 days and then it’s covered with beeswax.

Produced in Piedmont at the foot of Monte Rosa, this toma cheese is processed in the Piedmontese style with the addition of the typical Gorgonzola marbling.
The flavour in fact is delicate and buttery with classical, final aroma of the great Italian blue cheese, using whole cow’s milk cheese to which is added the pennicillium is added. The curd is broken in two successive moments with an interval of time between the two “breakings”.
