Blue Cheese

A typical pear shaped burrata cheese, this is a unique version of the standard burrata.
An external appearance seems that of a traditional burrata, with a characteristic porcelain white colour and shiny skin. However, once the burrata is cut, a creamy white liquid comes out and the strings of stretched curd with the presence of blue cheese cubes are noticeable, precisely due to the presence of gorgonzola on the inside.
The flavour is balanced, salty and slightly spicy. There is an intense flavor of gorgonzola, which is however slightly harmonized by the sweetness of the cream and stracciatella.

Burrata di Andria IGP 125 gr cup -11 pcs x cs – 1.375 kg box
A fresh cheese made of spun paste originally produced in the
region of Puglia. It’s made with cow’s milk and has a spherical
shape between 7 and 10 cm in diameter. Its appearance is that of a small bag of white paste, with a thickness of about 2 mm. This handmade “bag” encloses a soft heart called stracciatella – stretched curd mixed with milk and cream.
Its name is not random as it’s derived from the method of preparation. The “pasta filata” is ” torn ” by hand to form pieces (stracci or lucini ) of irregular shape and length. Its taste is given by the flavor of fresh milk combined with cream and its unmistakable shape.
The raw material selection, along with the processing which necessarily involves the manual unraveling of the stretched curd and the characteristic closure (head), are the distinctive elements of the Burrata di Andria.

Ubriaco Vojant cheese is produced in Veneto.
Its production is long. The raw pasteurized cow’s milk is heated, and rennet is added to create the “cagliata”. This paste is then broken and cooked. The forms are then left to soak in Merlot wine for 5 days and left to ripe for at least 120 days.
It has an intense and piquant with fruity traces of wine.
It is usually paired aged, red wines, hot marrow preserves, Vin Santo or Marsala jelly and homemade bread.
