Crotonese cheese comes from Calabria in southern Italy.
Its production is long and usually it takes place from January to June. First the milk is heated at a temperature of 38°C, then the rennet is added to form the “cagliata”. This paste is then broken with a “mscu” an appropriate wooden stick, the “cagliata” is then heated again at a temperature of 44°C. The paste is then modeled to create the forms. These forms are then salted for some days. They then are left to ripe for 12 months.

Made with sheep’s milk pasteurised at 72°C, cooling at 32°-35°C.
Cheese cultures are added and mixture is left to ferment, after which rennet is added and the mixture coagulates.
The curd is broken up and drained into moulds.
The cheese is then brined and dried in a cold room at 6°- 8°C. Final stage of maturation in a cold room at 8°C for about 30 days and then it’s covered with beeswax.

This particular golden looking cheese is made from Sicilian ewe’s milk only, in the city of Enna, created by mixing saffron stems and whole black whole peppercorns.

The name of the cheese is derived from Lake Raschera, which lies at the foot of Mt Mongioie. The cheese is matured for about two months to develop a fine and delicate flavour. Slightly spicy and salty when aged, the texture of the cheese is elastic and dotted with irregular holes throughout the surface. This natural rind cheese has a grassy and bright paste.
