This is a mixed milk blue cheese from the Langhe Region in Piemonte.
The beautiful marbling of Blu di Langa, is obtained by piercing the cheese to oxygenate it, allowing the moulds to develop and grow. The result is a surprisingly delicate contrast between the sweetness and the softness of the paste and the roughness of the marbling with its mushroomy flavours.
This blue cheese is characterized with a white, soft texture and blue/green veins and a sweet by tangy taste.

Scamorza is an Italian, spun-paste cow’s milk cheese. Shaped like provolone in a pear shape, it is a semi-soft white cheese with a texture comparable to that of a firm, dry mozzarella.
At the end of the cheese-making process, the cheese is hung together in strings to ripen for about two weeks. The process of ripening the cheese has given its name: Scamorza, which means ‘beheaded’ in southern Italy.
The smoked variant is made by smoking the cheese over flaming straw for around 10 to 15 minutes.

Its production is simple. Calf rennet is added in raw pasteurized buffalo to create the “cagliata”. It was originally a typical Veneto method for facilitating the preserving of cheeses, but it is now used mainly as a means of giving the products a particular flavor.
The practice is currently widespread throughout many areas of Italy but its origins lie in and around Treviso.
