Piave Mezzano cheese is produced in Veneto.
Its production is simple, the pasteurized milk is inoculated with lactose or serum milk from the dairy. Then the calf rennet is added to create the “cagliata”, this paste is broken to create the cheese forms. These forms are then salted and left to ripe for 60-180 days.
It has a sweet and intense taste, and it is usually served with full body red wines and chestnut honey, spicy fruit mustard, fresh fruit and homemade bread.

Salame Piemonte PGI is a stuffed, coarse grain charcuterie product made from a mixture of pig meat obtained from the Italian Large White, Italian Landrace or Duroc pig breeds, or from other breeds compatible with the Italian heavy pig. The lean part of the paste is made with meat from the leg, shoulder, and stomach, while the fatty part consists of high-quality fat from the stomach, neck, and lard. The meat is ground in a meat grinder, the mixture is then seasoned with salt, pepper, garlic, cloves, nutmeg, and red Piedmont wine, stuffed into natural casings or natural reconstituted casings, and tied with twine.
The product is then heat dried to accelerate the drying out process. It has a delicate, spicy smell.
It can be eaten on its own with fresh bread and mustard or served with cheeses and salads. -

Lardo is, in essence, cured pork fat. The lard is taken specifically from the back of the pig and cured in a marble basin with a mixture of salt and spices according to the Valsesia method. It’s a delicious product that we’ve only recently come to appreciate, however Italians have been eating it for centuries. The cherished fat sections are milky-white fat, while the leaner parts vary in colour from pink to red depending on the muscular anatomy.
To make Lardo, the marble basins are first rubbed all over with garlic before the trimmed piece of fat is laid inside. Salt, pepper, rosemary, and garlic are all placed in between the layers of lard and the fat is left to cure. It’s sent is delicate: the sweet notes in the flavour set off the spices and herbs used in the curing process.
SERVING
It is usually eaten with bruschetta and on its own with olive oil. Can be used in numerous recipes.

Prosciutto di Modena PDO is a raw and cured charcuterie product obtained through the processing of fresh legs from heavy pigs born and reared in Italy. Immediately after slaughtering, the fresh legs are refrigerated until they reach a temperature of around 0°C. The salting operations are repeated twice, after which the hams are left to rest for at least 60 days in special rooms with controlled temperature and humidity. After the resting period, the legs are washed and dried before curing, which lasts for at least 14 months from the start of processing. Greasing takes place during this period, which involves the exposed part of the ham being covered with a paste of pork fat, salt, pepper, and rice flour.

The flavor is savory yet not salty, with a pleasant, sweet, and intense fragrance. It is best cut in thin slices shortly before serving. A fresh cheese made of spun paste originally produced in the
region of Puglia. It’s made with cow’s milk and has a spherical
shape between 7 and 10 cm in diameter. Its appearance is that of a small bag of white paste, with a thickness of about 2 mm. This handmade “bag” encloses a soft heart called stracciatella – stretched curd mixed with milk and cream.
Its name is not random as it’s derived from the method of preparation. The “pasta filata” is ” torn ” by hand to form pieces (stracci or lucini ) of irregular shape and length. Its taste is given by the flavor of fresh milk combined with cream and its unmistakable shape.
The raw material selection, along with the processing which necessarily involves the manual unraveling of the stretched curd and the characteristic closure (head), are the distinctive elements of the Burrata di Andria.

This particular variety of Caciocavallo (considered the best and more noble example, defined by some as the Parmigiano Reggiano of the South) takes its name from the breed of cattle used for its production. Aged Cheese

This is the alter ego of ‘Bitto’ cheese, produced mainly in the autumn, winter and spring months is made exclusively on the alpine pastures. Like Bitto, it was awarded denomination of protected origin (DOP) status in 1995. It can be ripened with excellent results but it is often preferred fresh on its own or as an ingredient of traditional Valtellina recipes.

Blue Cheese
Castelmagno DOP – 3kg

Castelmagno is a type of cheese that is produced in the city of Castelmagno in Piedmont.
Its production takes a lot of time. First calf rennet is added to the cow’s milk, then the paste is cooked at a temperature of 35 °C. The “cagliata” is then broken to prepare the cheese wheels. The wheels are salted and left to ripen in a dry and cold place for 60 days.
It is usually served with full bodied, aged red wines, white watermelon chutney, blueberry jam, rye bread and “Polenta” (a dish of boiled cornmeal).

Cavallina cheese is produced with Valle Cavallina’s cow’s milk, rennet and salt. The paste is light, and the rind is shiny and slightly dark.
The ripening is done in underground warehouses with controlled humidity for 45 days.

Caprino goat, cows’ cheese is produced in Lombardy by Mauri.
Its production is simple. The milk is then heated to promote coagulation that takes place within 24 hours. Once the coagulation occurs, the curd is removed to a mold without milling. The molds sit for a period of 24 hours for the whey to drain out completely. The cheese is then salted, black truffle is added and turned several times and then allowed to age depending on product desired.
It has a mellow goat flavor and a hint of spice in the finish.

Aged Cheese
Crotonese Cheese – 2kg

Crotonese cheese comes from Calabria in southern Italy.
Its production is long and usually it takes place from January to June. First the milk is heated at a temperature of 38°C, then the rennet is added to form the “cagliata”. This paste is then broken with a “mscu” an appropriate wooden stick, the “cagliata” is then heated again at a temperature of 44°C. The paste is then modeled to create the forms. These forms are then salted for some days. They then are left to ripe for 12 months.
It has a sweet and salty flavor. It is usually served with spicy pear and apple mustard, pasta and homemade bread.

Semi Hard Cheese
D’Antigorio Riserve Cheese – 250g
From the Ossola valleys of Piemonte, this toma cheese is aged for a minimum of 60 days.
The cheese is covered with “Prunent” pomace (a native variety of Nebbiolo vine). It allows the cheese to absorb the aroma of the wine, without coloring the paste but only the noble rind.
This unique cheese is characterized by a very intense flavor, with slight notes of grass or hay – a perfect combination with a robust red wine or even a typical Italian salami like pancetta or lardo. Its aspect is compact, with dense holes and a straw yellow colour.
