Sicilian Anchovy Colatura / Sauce 100 ml
The product is made with anchovies fished in the Mediterranean Sea, subject to processing within 24 hours of capture.
Manually eviscerated, anchovies are placed in a container with alternate layers of fish and salt. Completed the layers, during the first 48 hours, the product is “pressed” with weight – first extraction of liquid is thrown out. Following collections are poured into containers of anchovies holding an ideal temperature of 18-20 degrees Celsius. At the end of the maturation period, between 4 to 5 months, the last stage of the process is carried out.
Anchovy juice is filtered and placed into bottles. The result is an amber coloured juice with a strong, full-bodied taste.
Weight per piece: 100 ml
Comes in a convenient spray bottle.

Cravet is an Italian soft-ripened cheese, made with goat’s milk.
It has a very thin, white, edible crust. The cheese is very soft, like Brie. As it ages, it becomes creamier and runnier. It is aged for a very short time: just a couple of weeks.
It is generally served as a table cheese, either alone or with oil, salt, and pepper.
It has a pungent smell, but the taste is not strong rather it’s slightly buttery with a sweet aftertaste.

Aged Cheese
Giunco Black Aged Cheese – Whole Wheel approx. 5.5 kg

Giunco Black cheese is produced with fresh sheep’s milk from Sardinia.
Its production takes six months. First the milk is heated, and rennet is added to create the paste to then shape the forms of cheese. After this process the cheese is left to ripe for at least 6 months.
It has an aromatic and delicate flavor. It is usually served with Cannonau wine, and it is often used also as a grated cheese.
