A compact, elastic and ivory cheese that has a special characteristic. It is bathed for several days in wine, usually Merlot red wine marc, then the wine is not absorbed but its perfume penetrates the cheese and the subsequent ripening accentuates it even more. It has an intense and spicy taste with an additional of rich fruity notes of wine.
It was originally a typical Veneto method for facilitating the preserving of cheeses, but it is now used mainly as a means of giving the products a particular flavor.
The practice is currently widespread throughout many areas of Italy but its origins lie in and around Treviso.
It is produced with goat and cow milk.

The Barberosso cheese is from Piedmont, specifically from the area of the Biella Alps.
It is produces with cow’s milk with the addition of a great classic of Piedmont, Barbera wine. This red wine is known for deep color, full body, low tannins and high levels of acidity.
This cheese has an aromatic taste with a hint of wine whose acidity counteracts the fat of the cheese. It is usually served with fruity white wines, orange jam, fresh fruits and nut bread.

Aged Cheese
Casera Valtellina DOP Cheese

This is the alter ego of ‘Bitto’ cheese, produced mainly in the autumn, winter and spring months is made exclusively on the alpine pastures. Like Bitto, it was awarded denomination of protected origin (DOP) status in 1995. It can be ripened with excellent results but it is often preferred fresh on its own or as an ingredient of traditional Valtellina recipes.

Aged Cheese
Crotonese Cheese – 2kg

Crotonese cheese comes from Calabria in southern Italy.
Its production is long and usually it takes place from January to June. First the milk is heated at a temperature of 38°C, then the rennet is added to form the “cagliata”. This paste is then broken with a “mscu” an appropriate wooden stick, the “cagliata” is then heated again at a temperature of 44°C. The paste is then modeled to create the forms. These forms are then salted for some days. They then are left to ripe for 12 months.
It has a sweet and salty flavor. It is usually served with spicy pear and apple mustard, pasta and homemade bread.
