Slightly tangy with fragrant aroma, this sheep’s milk cheese is made by the cheesemakers in Puglia, Italy.
A typical southern Italian semi-hard cheese with elastic consistency, few holes and pale-yellow paste is produced according to traditional recipe using natural rennet. Southern Italians used it mainly as a gratin cheese, but over the last few years, this “Coratino” has emerged as a delicious table cheese and can be used in many recipes or simply as part of a charcuterie or cheese board.

An acidic fermented goat’s cheese produced with animal rennet. Produced from Feb/March to October in Piemonte. It’s very soft and has a fresh, delicate, and slightly acidic taste.
Can be enjoyed on its own, with fruit salads or added as an ingredient in many main courses and salads. With its soft texture it can also be spread on some artisan bread for a healthy snack.

Fresh Cheese
Buffalo Mozzarella DOP 250 gr – 8 pcs per box – 2.5 kg box
Buffalo mozzarella is produced in Campania. The buffalo milk, collected every morning at 3 am at the buffalo farms, is brought to the Dairy and is discharged into large circular tanks. Here, the milk is heated up to a temperature of 35-45 degrees. Then rennet is added. After about 30 minutes the cheesemaker makes a first break of the curd, making a cross on the surface with a knife. After about three / four hours of maturation, the curd grows into a uniform and elastic mass, which will then be spun with hot water. Boiling water at 100 ° C is poured into the spinners. Their content is then mixed with a stick, leading to the formation of a uniform paste (‘filatura’, ‘spinning’). Then the forms are created and salted.
It could be eaten on its own or with tomatoes or ham.

Semi Hard Cheese
Sola di latte di bufala – Casatica Cheese – 2kg

Sola di latte di bufala cheese is produced in Lombardia.
Its production is simple. Calf rennet is added in raw pasteurized buffalo to create the “cagliata”. This paste is then broken and under serum, acidifies to the point of spinning, after which it is placed in tubs with boiling water for the spinning process. The forms are then salted and left to ripe for 20 days.
It has a delicate and sweet taste, and it is usually paired with white wines, light and dark beer, red tomato jam and “Ciabatta” bread.
