Burrata is a fresh cheese from Campania.
Its production starts with the processing of the milk. The raw milk is pasteurized and added with the whey of the previous processing and the “Cagliata” is then broken. The resulting dough is acidified and placed in tubs with boiling water for the spinning process. At this point with the pasta filata are made bags in which the butter nuts are stored.
It as a characteristic, delicate and aromatic flavor. It is usually eaten alone or used as a topper in pizza and pasta.

The younger brother of the traditional Gorgonzola (today known as Piccante), Sweet Gorgonzola was born in the regions of Lombardy and Piemonte, right after World War II. Soon enogh it became the most known variety of the Gorgonzola cheese. The main difference between the two varities consists of the greater whey content, making the Sweet Gorgonzola softer and more delicate version.

This is a tasty cheese with genuine ingredients – made from sheep’s milk with the addition of truffle “veins” predominantly found in the cheese’s paste, giving it a unique and unmistakable fragrance and flavour.
The interior is delicious and firm, tipical of the pecorino cheese and the distinctive aroma is given by the presence of truffle pieces.

This cheese has a wide geographical production, produced in two different versions.
Robiola Oro, presented here, is the one that is less aged of the two, but despite it, this variety has its own personality for the quality of basic milk – cattle fed with hay and its process of refining focuses on delivering one superb cheese!
