Pistachio is one of the most classic additions for pecorino. This cheese is made from fresh Italian sheep’s milk and an addition of pistachio. The thin white rind sparkled with pistachio keeps safe the well balanced interior with its special taste of milk and pistachio nuts.
This is a pre-order cheese and waiting period to receive it is approximately 2 weeks.
Serving suggestions: Great by itself it is an excellent snack or a perfect choice for the cheese board. Serve it with a fresh beer.
Ingredients: Pasteurized sheep’s MILK, PISTACHIO 2%, salt, rennet, lactic ferments
Aging period: minimum of 10 days
Shelf Life: Full wheel 4 months from the production date
Storage temperature: in fridge from +2ºC to +6ºC
Texture: Compact, white or yellow pale, green sparkles of pistachio

This particular variety of Caciocavallo (considered the best and more noble example, defined by some as the Parmigiano Reggiano of the South) takes its name from the breed of cattle used for its production. Asiago cheese, is one of the most loved Italian gastronomic specialties. It has a long story – it was first made in the year 1000 A.D.
Nowadays it is mostly produced in Veneto with whole cow’s milk. The milk is heated to a temperature of 35 ºC, then the rennet is added to it to form the “Cagliata”, this mixture is heated again and then salted and cut. The forms are left to refine for about 20/40 days.
It has a sweet and delicate taste, and it is usually served with white wine and as an appetizer before the main course. -

This cheese has a wide geographical production, produced in two different versions.
Robiola Oro, presented here, is the one that is less aged of the two, but despite it, this variety has its own personality for the quality of basic milk – cattle fed with hay and its process of refining focuses on delivering one superb cheese!
It has a yellow clear and soft paste. White flowered rind is edible.
