Production of this type of cheese usually starts in spring, during the months of April and May, when the flocks of sheep return to grazing in the open fields. The new growth of grass has a smell and essence typical of the new season, which are also passed to the milk produced by the animals, giving it a particular aroma.
Serving suggestions: It is generally served at room temperature after the walnut leaves have been cleaned away.
It can be simply grated to savour special pasta dishes, combined with other cheeses as an appetizer, or as a complement for numerous meat dishes, or even eaten by itself with good homemade bread. Also excellent as a snack together with acacia honey.
